Perhaps this season may seem to you a bit more boring and with less variety of vegetables and greens compared to spring or summer. However, we can always have an international approach and re-version those products we already know. Today, I propose that you travel to Colombia with these typical vegetable empanadas. In January and February, you can already find tasty fresh peas and incorporate them in this recipe. Who doesn’t know chard? I invite you to try the purple chard and travel East through ginger, soy sauce and Mirim (rice vinegar). Finally, I bring you a very typical Catalonia dish, the land of sweet calçots. If you can't find them in your area you can substitute them with leeks, it's not exactly the same but the result is also delicious. In this recipe, we prepare them in the oven, but feel free to play with the grill or comfit them.
